Small Block Engine Parts help?

I am very interested in classic cars and hot rods and wants to start rebuilding as a hobby. I found much information on the restoration of the Car Body , paint and rebuild a motor, but I want to know more about engine parts. When I look there are some websites with different sizes of some (eg, intake manifolds, lifters, cylinder heads, pistons) I wonder what is the meaning of different sizes and what to do for performance differences. If you know of a site or a book help please tell me. Thank you for the help.
